Hawaii Balikbayan Box - At Ossfest!
For this drop, I wanted to highlight some of my favourites bites and flavours from the trip!
Spam & Egg Musubi Bun - Inspired by the classic spam Musubi that we would eat by the beach! I also grew up eating spam and egg for breakfast with garlic fried rice. Our brioche bun is filled with teriyaki spam, egg and topped with sesame seeds wrapped in seaweed.
Haupia Flakey Hand Pie - These are inspired by the pies found in McDonalds in Hawaii! They are crisp and golden on the outside and coconut-y and creamy on the inside. Haupia is a classic Hawaiian dessert and is a cross between a coconut jelly and pudding. Similarly, in the Philippines we have Maja Blanca which is also a coconut pudding but with corn! Our hand pies are made with a flakey puff pastry and filled with homemade haupia, just like the ones we had in Hawaii.
Kona Coffee Chocolate Mousse Choux - Hawaii is known for their Kona coffee, which is dark and rich in flavour. Our choux is crusted with Kona coffee and filled with Chachalate dark chocolate mousse infused with Kona coffee.
Li Hing Pineapple Roll Cake - This is THE Hawaiian combo: pineapple with Li Hing powder. We’re jazzing this up by using white Li Hing (it’s usually red) recommended to us by a friend! Our roll cake is filled with whipped cream and sweet pineapple chunks, topped with thin pineapple slices and white Li Hing powder.
Ube Coconut Basque Cheesecake Slice - Ube and coconut are staple dessert flavours in both Hawaii and Philippines so of course we had to include our Ube coconut basque! Sweet (but not too sweet) and delicate Filipino Ube (purple sweet potato) infused in a rich coconut cream to make a smooth and creamy basque cheesecake.
This menu was super fun to create and makes us miss Hawaii! We hope to transport you with all these amazing and unique flavours!
